Recipe- Creme Egg Brownies

With Easter around the corner, and Creme Eggs back in shops, it means it’s time for my favourite brownies.  If you are a Creme Egg fan you’ll have to bake them, they are so yummy!

 Ingredients

6 Cadbury’s Creme Eggs cut in half

185g unsalted butter

85g plain flour

185g dark chocolate

40g cocoa powder

3 eggs

275g golden caster sugar

Method

Grease a 20cm square baking tin and preheat the oven to 160ºC.

Melt the butter and dark chocolate together, and leave to cool.

Break the 3 eggs into a mixing bowl and add in the golden caster sugar. With an electric hand mixer on full speed, whisk the eggs and sugar together until they look thick and creamy (this can take between 3-5 minutes).

Pour the cooled chocolate mixture over the mixed egg and sugar, and fold in. Next sift the cocoa powder and flour into the mixture, and fold in. Pour the mixture into the baking tray and cook for 15 minutes. Whilst the mixture is baking you can cut the Creme Eggs in half, and after the 15 minutes take the tray out of the oven and press the Creme Egg halves into the mix. Put the brownies back into the oven for 5-10 minutes.

Leave them to cool, then cut and remove from tin and enjoy!
